So I scored this Graham White e-bell, wondering if you guys know what I could use as a power source

Nice e-bell.

This or this DC to DC converter should handle that device just fine.

Be aware that the 48 VDC output should be considered a hazardous voltage and handled appropriately.

What did you end up getting as a power source?

I used one of these I found on ebay. You can google Waterproof DC/DC Car Voltage Converter 12V/24V Step Up to 48V 3A power supply and find many to choose from.
